A better way to add vitamin A, folate, carotenoids and the fiber of spinach to a pasta dish is to add the vegetable to your sauce. You can add frozen spinach (thaw it first, drain it and chop it) or fresh (wash it carefully to remove any dirt, remove the stems and chop it).
