Steaming, stir-frying or boiling increases the iron in broccoli, green peppers and tomatoes, according to researchers at Rutgers University. Vitamin C helps the body absorb iron found in vegetables. Caffeine, tannin (found in tea) and calcium decrease the body's ability to absorb iron.
